So, I vanished again for a day. I went back home today to have lunch with my dad and sister. We went to a place called The Tilted Kilt. It made the feminist in me cringe. It's basically the "Scottish" version of Hooters. Women with mid sections exposed, cleavage pushed up, and skirts very short. The food was really good though!
My sister is on the Paleo diet, and I am keeping track of calories (while trying to be aware of how my calories are being utilized! No Big Macs for me anymore!). She ordered their GRILLED chicken wings which were amazingly tasty, and I ordered their Italian Herb Chicken which was served with grilled veggies. Now, per most restaurants, they give you more than 1 (3 oz.) serving. So I eyeballed the portion I should have, and ate all the veggies, which were thankfully steamed with just salt added.
It's easy to go for the burger and fries, but it made me feel really good to know I picked a nutritious lunch while eating out!
Mind you, I don't get to eat out often, but I don't use it as an excuse to eat what I want, like I used to do when my parents would take me out.
Anyway, after texting with my mommy (not ashamed to call her that still; I love you Mom!), she reminded me I hadn't posted my delicious turkey meat ball recipe yet! So here it is:
This made about 14 meatballs. I eyeballed them so they ended up being about an inch tall/wide.
1 lb ground turkey
1/4 cup egg beaters (You can substitute 2 egg whites or 1 egg if you prefer)
1/4 panko bread crumbs (for binding, you can also probably use Italian bread crumbs)
1 tbsp garlic powder
1 tbsp seasoning (I used Penzey's Mural of Flavor spice, but Italian would be good too!)
1 pinch of black pepper
Now, my oven is broken so I pan fried mine in some oil. My nutrition data will not count this, as baking is preferable! I was also in a hurry to get these guys done, so I nuked them (shame!) for 1 minute until they were cooked. I allowed them to simmer with the sauce until my pasta was done cooking. However, if I hadn't microwaved them, I would've let them finish cooking in the sauce for about 20 minutes after pan-frying.
Calories/nutrition are per 1 meatball. So have a few! I sure did. Since it's just my guy and myself, we had leftovers even after he helped himself to a second serving. I think they'd be good in a pita with more sauce, and a sprinkle of Italian blend cheese on top. Yummy!
